Amazing

Last night Chris and I had the best night! I don't know if we were like two teenagers in love or more like old people but heres what went down...he asked if I would like to go out to dinner so I thought all day about where to go and the only place that I couldn't get out of my head was none other than the all American I-HOP! We hopped in the car and found the closest Ihop which by the way is 3 miles from us....we sat down with grandma and grandpas surrounding our table and ordered us the never ending pancake special. It was so perfect! I ate 4 pancakes, 2 eggs, hashbrowns and bacon....totally beat Chris. Our dinner only cost us $12.61, pretty awesome! We headed home and decided that we wanted to play tennis. It had to be the most entertaining game of tennis ever. We lost almost all of our balls and by the time we did lose all of them I thought I was going to fall over. We gathered all of them-finally and headed back home. (We are now huge fans of tennis and will be playing every night.) Anyway, when we got home we got right into a game of Yahtzee..everynight is game night at our house. If you're ever in the mood for games you know where we live :) That's pretty much it. Just wanted to share our wonderful night with all of you.

C&N,

We are so blessed to have you in our lives and we've already shared so many important memories together. We love you both so much and we hope 2008 brings you more joy, love and happiness. Pops is in our prayers and we're sending you all our love. We're practically neighbors and yet our busy schedules keep us apart. Let's plan a dinner soon!

With love, Mindi & Philip Stedman

Nikki, isn't it awesome when you and Chris can just have fun. And don't have a care in the world but just about each other.

The closet I-Hop around us is in Indiana so about 45 min. away :(

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.
Here’s what I did..

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again.
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating.
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
I love food. I reward myself wit…
