happy day.

Today was wonderful. I went to grandma and grandpas this afternoon and went to Panera for lunch with grandma. After lunch we went and walked around the Castaways, it is such a beautiful walk! We had a great time just walking and talking. I came home around 2:30 and Chris arrived home just 5 minutes after me so that was a nice surprise! We had such a fun afternoon! I made brownies for tonight and then we went to Rogers Garden. What a fun place that is! We or I guess it was more like I found some adorable things for our room/bathroom. I am so excited.
Tonight was our favorite yet, we went back over to grandma and grandpas for dinner and our championship game of Skip Bo. Grandpa grilled up some fabulous salmon, very good! We got right into the game, grandma and I whooped the guys the first game, the boys came back on the second and then we smoked them for the championship. They said we cheated, it was very intense but we did win fare and square. It was amazing. I did the winners dance for a while. In fact, I still am because its the first time I have been able to kick Chris' butt in that game in a while. I love it! After a beautiful win we all sat around and chatted for a couple of hours. Grandpa told some amazing stories, I don't know where they come from or how he is still alive after everything we have heard but I caught a few on tape. He is hilarious and I love him so much. We could sit and listen to him all day. It has been such a great day and I am sad to see it end but we have some pretty fun things planned for tomorrow.

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever. 


What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon. 
Step one.  Get your ingredients out. 

I fill my glass up halfway with water and pour a capful of instant espresso in. 

Mix it real good. 

Time to cool it down. 

Now comes the sweet part. 



This next step is money.  Lordy. 

If you’re feeling really naughty you can add caramel sauce.  Do it.

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again. 
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating. 
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
