I've got the bug

Don't worry, no swine flu here. I've got the cleaning/nesting bug BAD! For those of you who know me (which is hopefully everyone who reads this blog) knows that I am close to if not the world's biggest clean freak. Well get this clean freak pregnant and watch out! Poor Chris doesn't know what is going on. I am cleaning everything, washing everything, organizing, throwing out, giving away, selling...etc. Whew. I don't think I've sat down once this past week. I have been so busy going though this house (which is pretty tidy already) and making it perfect. Perfect for our baby that is. On Monday night I took all of the hanging clothes out of Chris' closet and transferred them to his new closet (in the office). His old walk in closet is in Kate's room and we are tearing the whole thing out and are going to make it all built-ins. Last night we went through the rest of his clothes and got rid of 2 trash bags full and transferred the rest in his new organizational bins. So much work! We are going to tear the cabinets that are in there now out this weekend, then scrape the closet ceiling and paint it before the built ins and all her new clothes go in! And come next month...we're going to move out the furniture that is in the nursery and start getting it ready for our little girly girl! I can hardly wait!! I am such a planner and love to be organized. I'm ready! All of her furniture is in, we're picking it up on Saturday. We weren't going to order it until next month but the line that we love is changing so we ordered it. It's gorgeous. Can't wait to see it all put together! I can't believe that our little Kate is going to be here in 5 months! Holy cow!!

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.
Here’s what I did..

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again.
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating.
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
I love food. I reward myself wit…
