Cabo, day 4

It's hard to believe we're half way done with our trip. Today was great. We went to the most popular bay in Cabo this morning for snorkeling. We were the first ones there then all the snorkeling tour boats arrived. It was absolutely beautiful and the water was perfect. The boys went off to snorkel first while MIL and I floated in the waves. It was heavenly. I was on the look out for fish and praise the Lord I only saw a couple... Chris came back and floated with me and thankfully he waited until I was out of the water to tell me about all the creatures he saw under there. Soo glad that I didn't stick my head under water and see all the creepy creatures! We came back to the resort for lunch then went and laid by the pool. All of us got a ton of sun today. Wow! I'm starting to blend in with the locals. My motto is tan fat is better than white fat so I'll take it! We had a super relaxing evening in the condo....made a yummy mexican dinner and played couples skip-bo, Chris and I are the champions so far! We took another walk on the beach tonight and saw a sweet lab puppy, made me miss our puppies! I woke up this morning and couldn't believe how my belly has changed. We'll get a picture at the end of the week. I literally popped overnight. Kate has been kicking up a storm all day, everyday! We love it! I just got out of my bubble bath and Chris is out on the balcony with the family smoking his cigar and playing cribbage. Until tomorrow....the Lord's blessings to you...

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever. 


What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon. 
Step one.  Get your ingredients out. 

I fill my glass up halfway with water and pour a capful of instant espresso in. 

Mix it real good. 

Time to cool it down. 

Now comes the sweet part. 



This next step is money.  Lordy. 

If you’re feeling really naughty you can add caramel sauce.  Do it.

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again. 
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating. 
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
