Don't laugh!

One more story to bore you all. I need my pregnant friends and previously pregnant friends to come in on this one... Last night, I was obviously very content after my cheeseburger and had a great night sleep. I was sleeping great until someone called my cell phone at 2:45am! Who does that?! Anyway, after that I fell into a deep sleep and had a bunch of crazy dreams. Dreams I won't even fill you in on. The oddest thing though. I woke up around 5:45am laughing hysterically. I was laughing in my dream and apparently I was laughing out loud the whole time. Chris was the one who woke me up out of it....I think I completely freaked him out. He freaked me out! It was a good dream and he ruined it! Once I was awake I couldn't stop laughing. It was like the full on belly laugh, you know where you get the giggles and just can't stop? I tried to explain to Chris that it was a hilarious dream (even though it was so extremely lame, I'm not even going to tell you what it was about. Embarrassing!) I fell back asleep while laughing and then had this fabulous dream about the fair. (another embarrassing dream) I was painting people nails and it was just starting to get really exciting and then....the phone rang!! Ahhh.. Anyway. I woke up in such a giggly and bubbly mood thanks to my fabulous dreams. Are any of my other preggo's and mom friends having crazy dreams?? It's kind of fun, I fall asleep and I'm entertained and at the fair! Doesn't get any better than that... Now that I have completely made a fool of myself to all of you I'm going to go make dinner. But please, someone tell me this is part of crazy hormones going on right?! Or maybe I really am just plain nuts.

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.
Here’s what I did..

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again.
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating.
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
I love food. I reward myself wit…

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.
