whew!

I am feeling like a new woman tonight. My long list of "things to do before the babe arrives" is getting shorter! I won't even begin to bore you with what is on my list but let me tell you, it's long! Tonight I got to cross off a few big ones! #1. Our air conditioner was fixed yesterday. This is great news. It was making the most annoying sound in the world every time it turned on so I hated turning it on. Since I have my own built in personal heater it is not acceptable for the house to be warmer than 74 degrees so I was living with the sound....not anymore! :) #2. The Jeep now has new breaks, tires and the alignment has been fixed! This was totally weighing on my shoulders. It has to be safe and in perfect shape to tote the princess around in. #3. I finally made an appointment to go see my dermatologist. Thank you to all of you who have been nagging me to go in and have my sun spots looked at. I feel relieved knowing that I'll know soon if they are ok or not. #4. Made my appointment for my ultrasound next Wednesday, can hardly wait to see Kate again. We know that everything is fine so we're looking forward to getting some good news and one last sneak peak. #5. I only have 2 more days of work left. That's right people. 2! I am going to miss taking care of the kiddos but I am really looking forward to having a month of no work, no nothing! I will be doing all of my last minute nesting things next month. Oh, I can hardly wait!!!! That's it for now. I need to rest up for some more partying that is going to happen this weekend! :)

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.
Here’s what I did..

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again.
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating.
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
I love food. I reward myself wit…

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.
