Best Christmas EVER!

Chris and I have not stopped talking about this Christmas. It was all around the best one yet. It was so great spending time with the family and sharing the joy of our precious Kate. We spent Christmas Eve down in Newport at grandma and grandpas house. It was one that will go down in the books for sure. So memorable. We spent the night at mom and dads house that night as always which was a lot of fun. We all sat around in our new jammies and watched "Christmas Story" like we do every year. Who doesn't love family traditions? Christmas morning was beautiful. We all slept in a little bit and then enjoyed a delicious brunch with the whole family. Awesome! We opened the most wonderful gifts and had ourselves a merry little Christmas. Chris and I packed up the babe and we headed over to his parents house. We had a very yummy dinner, opened more great presents and made more marvelous memories with the family. His grandparents came down for Christmas and it was soo much fun having them here. They got to meet their 1st great grand baby which was so neat. They are just precious people. I have all I have ever wanted right under our little roof. A husband who loves and cherishes me and a baby girl who I could not love more. Our hearts are so full and we are feeling super blessed. I am pretty sure we enjoyed this Christmas so much more because it wasn't about the gifts under the tree. Sure, they were pretty fabulous but our hearts have been focused on the real reason of this beautiful season. Jesus! We are so thankful for Him, without Jesus there would have been nothing to celebrate, no CHRISTmas. Thank you Jesus for coming to this earth and giving your life for me! We pray you had yourself a merry little Christmas also...

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever. 


What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon. 
Step one.  Get your ingredients out. 

I fill my glass up halfway with water and pour a capful of instant espresso in. 

Mix it real good. 

Time to cool it down. 

Now comes the sweet part. 



This next step is money.  Lordy. 

If you’re feeling really naughty you can add caramel sauce.  Do it.

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again. 
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating. 
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
