Fro Bow

This is embarrassing. Really. I know that I have been blessed with extra thick hair and I will bet anyone $500 that I will never go bauld. Great right? BUT I hate it. I've never been a fan of my hair. It's horrible. Gross. Too big. Boring. Yadda yadda yadda. It's curly, crimpy, coarse, nasty... Obviously, I don't like it. The only thing I do like and appreciate about my hair is the color. I have never colored, bleached or died it. It is all natural baby. When I was in elementary school I was nick named "fro bow". It was never a bad thing, all of my friends named me that. (hmmm, maybe they weren't really my friends??? haha) I had a fro and my mom made me a bow to go with every single outfit I owned. Not kidding. They weren't you average cute little bow...no, they were big. Perfect for a fro. When I get a chance I will go back and find a picture and post those beauties for all of you to swoon over. When I was a senior in high school I got my hair chemically straightened. Best thing ever invented since whipped cream. It lasted for about a year and I continued to do it until we got married. (I'm convinced that Chris would have never taken a second look at me if my hair was how it is today). Ever since getting pregnant and giving birth my hair has changed. And not for the good... It is either in a bun or a pony tail every single day. I am finally going to bite the bullet and get the "Japanese" hair straightening done this Thursday!!!! Hallelujah!!!!! I won't go into details of how much this is costing my husband but it will be oh so worth it. He's pretty excited. I can't even tell you how excited I am. I'm literally counting down the hours until Thursday. It will take at least 4 hours and I will walk out of that salon feeling like a new woman. If only I could walk out of there 10 pounds lighter and toned too. Darn! Ok, so here are a couple pics that were taken this morning of my hair and what it looks like when I get out of the shower. I don't have enough guts to show you what it looks like dry, sorry! It even scares me... So here is the before shot. Stay tuned for the "after" one coming this Thursday! Yeah baby!!!

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.
Here’s what I did..

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again.
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating.
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
I love food. I reward myself wit…
