our day

Today was beautiful. in. every. way. Kate did really well with the time change. She slept for 8 hours straight, ate and went back to sleep for 3 more hours. Us girls got up around 10 this morning and the dada didn't get up until a little after noon. That's right, twelve o'clock. Must be nice huh? He needed it and it was well deserved. He works so hard for our little family and needed those extra couple of hours. Since we totally missed breakfast we skipped right to lunch and enjoyed it in the backyard over yummy carmel mocha's. Those will make anyone feel better, right? After lunch we packed up the car and drove all of 4 minutes to Yorba Regional Park. It was just what we needed. Fresh air. Sunshine. Blue Skies. The smell of BBQ. Exercise. Good conversations with my husband. A sweet nap for Kate. An all around good time! We had our own BBQ in the backyard this evening. Made the best burgers in town. You could say that we are ready for Spring and it's sunshine. Sad to say good bye to the weekend. It was so nice having Chris home with us. Kate and I have a lot of things coming up to keep us busy so that will help the time pass. It's time I log off the machine and go snuggle my loves. Chris is in bed feeding Kate and hearing him talk and sing to her is melting my heart. Sweet dreams y'all.

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever. 


What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon. 
Step one.  Get your ingredients out. 

I fill my glass up halfway with water and pour a capful of instant espresso in. 

Mix it real good. 

Time to cool it down. 

Now comes the sweet part. 



This next step is money.  Lordy. 

If you’re feeling really naughty you can add caramel sauce.  Do it.

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again. 
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating. 
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
