and the winner is....

my HUSBAND!
He is...

Chris had his final weigh in today and he lost.....37.4 pounds in 2 months!!!! SO amazing!!! I am so proud of him. He looks so awesome and weighs less than he did when we met! He won the pot of money which was super fun. I'm sure you're wondering what he is planning on doing with the cash. He put $25 bucks in his wallet, put $100 bucks in Kate's bank account and gave me a little over $400. I decided to keep a few bucks for the wallet and put the rest in the bank for something fun for us a family. Not sure what it will be yet. He is amazing in every way. So humble and so giving. He makes me want to be a better person daily.

It's nice to have the "losing" mentality over and work on maintaining. Now it's time to focus on toning and building muscle mass.

I am down a total of 15 pounds in 2 months. I'm feeling great. The best part is I am back in all of my pre-baby clothes which includes my awesome stack of jeans. Can't tell you how good it feels. There was a couple times I thought about giving them away because I didn't think my booty would ever fit back in them, let alone get them over my hips again. I am now back in all of them and have extra room to spare. I am still working on the losing part. The weight I am now is the weight I was when we got back from our honeymoon. Yes, I gained 7 pounds in 10 days at our all-inclusive resort. If I could get back to my wedding weight (7-10 more pounds) then I would be thrilled but not sure how that is going to work. I guess I need to stay focused.

We are so thankful for this lifestyle change. It came at the perfect time.
If WE can do this....anyone can! Set your mind to it! I would be more than happy to tell you the foods we ate, the foods we stayed away from and the exercises we are doing if you need some encouragement. Depending on the response, I might do a blog about it...
Chris is very proud to be a loser tonight. He lost a ton but gained so much out of this experience!

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.
Here’s what I did..

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again.
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating.
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
I love food. I reward myself wit…
