Give life

My sweet friend Barbara Johnson is an awesome nurse at St. Josephs Hospital (and also does Precious Prints, the adorable hand prints for babies)...she has such a beautiful heart and a tender one for babies. Barb totally encouraged me through facebook to help save babies at CHOC and donate blood. I have only given blood once in my life. It was for our pastor who was dying with cancer and my whole family went together and donated our blood to help him. It was painful but I didn't mind one bit because I knew it would help him.
I just found out that you can give blood every 56 days! Totally not something I would normally get excited about but it is saving babies lives! I went down to the Pavillion across from St. Joes and gave blood today. It was not a big deal at all. Sweet Barb sat with me the whole time while I ate my warm chocolate chip cookies that they gave me and sipped on my cold juice. It really was an awesome experience. So what if it hurt for a couple minutes, we are saving lives!! Please join me and get on the donor list...I have my parents signed up to go in next week along with Chris. And really...if I can do this, you can too. I hate needles, blood and pain but put yourself aside for an hour and help sick babies in need.
It's simple, all you have to do is call the center at: 714.744.8721 and find a time that works for you. They are located in the Pavillion in Orange across from CHOC on the first floor. Also, if you do call and sign up tell them you are Barbara Johnson's proxy pay. And please either send me an email or a message so I can contact her. Please help these little ones in need!!!

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.
Here’s what I did..

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again.
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating.
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
I love food. I reward myself wit…

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.
