Last weekend was perfect, minus the insane heat! We actually had a weekend all to ourselves. We all slept in, ate delicious breakfasts, napped, shopped and enjoyed our home. Kate is now eating big girl food (mixed with her baby food). Not sure who is having more fun with it. It is really weird seeing her eat pancakes, bananas and some of the same things we eat. We're slowly introducing her to new foods. She is definitely not a fan of eggs. I've made them a couple times for her and she picks them up and gags. Not sure if its the texture or what but it's hilarious. I think I'm going to wait a while to try them again.


We spent Saturday afternoon by our pool and
 came back for another swim after church on Sunday

.She is definitely a water baby.
I made Southern cheese grits and shrimp for dinner on Saturday night. They were delicious and made us wish we were sitting around the table with the family in Tennessee again.

 Kate joined us for dinner at the table in her high chair.
 She was very proud to be at the head of the table.

Kate also had her last ride in her infant seat last weekend.

We went to Disneyland last night for dinner & dessert.
Kate is a fan. She loves the lights, the sounds & people watching.
She was perfect!

Thankful for a quiet weekend and lots of family time.
 We live for little moments like this...

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy. 
Here’s what I did..

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever. 


What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon. 
Step one.  Get your ingredients out. 

I fill my glass up halfway with water and pour a capful of instant espresso in. 

Mix it real good. 

Time to cool it down. 

Now comes the sweet part. 



This next step is money.  Lordy. 

If you’re feeling really naughty you can add caramel sauce.  Do it.

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again. 
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating. 
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
