THANK YOU JESUS!!!!

My heart is FULL. My eyes are PUFFY.
I do not have the words to THANK Him.
As most of you know, I have been praying for a sweet little 6 year old girl who stole my heart last July. Her name is Kate McRae and last year she was diagnosed with an extremely rare form of brain cancer. Hopes were slim to none for a cure but we prayed...and prayed...and prayed...and we're still praying.
Precious Kate had her PET scan a couple days ago to see if there was any active cancer. I can't tell you how I've prayed for this girl along with hundreds of thousands of others who trust in the Lord. It's incredible. We have pleaded and begged the Lord to touch her with His healing hand.
Tonight, we got the news that the scan came back NEGATIVE! NO active cancer! It is dead! I have been crying for 2 hours now. Chris was so worried something was wrong when I came out to tell him the news. He too proclaimed that it is a miracle. My heart is overjoyed. I don't know when I have cried tears of joy like I am tonight. Thank you JESUS!!! He has heard our cries and has answered them. There is always that chance that it can come back but we are rebuking it in Jesus name. We are going to continue to pray for her complete healing, as if the cancer never existed! We are so thankful that the Lord is giving her more time here on earth...praying she has many more fruitful years to share here what the Lord has done in her life.
He is so good.
I could go on and on of the Lord's goodness towards us. Instead how about you take some time and reflect on the goodness and mercy He has shown towards you!!!

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again. 
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating. 
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever. 


What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon. 
Step one.  Get your ingredients out. 

I fill my glass up halfway with water and pour a capful of instant espresso in. 

Mix it real good. 

Time to cool it down. 

Now comes the sweet part. 



This next step is money.  Lordy. 

If you’re feeling really naughty you can add caramel sauce.  Do it.
