It must be Christmas time...

It was just another 85 degree day with sunshine and blue skies here in Southern California. I'm finally starting to realize why property is so expensive down here. While half of the nation is covered in snow we are feeling like we're in paradise! As wonderful as today was, I wish we had a blanket of snow on the ground with snowflakes falling! I think everyone who lives here wishes we could have at least one snow day!
Needless to say, it was a perfect weekend and we did our best to make the most of it. Both of the cars got washed and detailed, the front garden got new flowers, we washed windows, finished Christmas shopping (I need to stop!), baked, went to dad's company Christmas party, napped and spent time with family. The sunshine wore us out. It felt good to get so much done but I'm ready for a rainy weekend on the couch with cookies!

Homemade english toffee crunch bars
 cake balls!

notice she is right handed
And we now have 14 teeth!!!!

We went to the boat parade tonight which is 3 minutes away from our house and had so much fun. It was a lot different than our usual walks around the lake. We're usually bundled up with hot cocoa in hand. Instead tonight, people were in tank tops and instead of hot cocoa and coffee we had cold water and tea!

East Lake Village Boat Parade
 SO fun!
 love this lake..
Nothing says Christmas like the air conditioner going, ice cream and skirts!
It's just another So Cal Christmas.

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.
Here’s what I did..
HOMEMADE POP TARTSYIELD:9 servings PREP:1 hour COOK:25 minutes TOTAL:1 hour 25 minutes These are simple and SO delicious! A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again.
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating.
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
I love food. I reward myself wit…

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.
