Kate's new cottage

Our girl is growing up so fast. Last night we decided it was time for Kate to have her own place so we packed up and headed to Toys R 'US. Not sure it was a good idea taking my husband with me. Talk about a little kid's fantasy store. My man is 29 going on 9 at heart. I did a bunch of searching around to find the perfect house for Kate and when I came across this little cottage it was like a match made in heaven. It's called the Neat and Tidy Cottage. I promise I did not name it. Y'all how perfect is that? You know me, neat freak and all.

I only wish I had a video camera last night in the Toys R 'US parking lot. We brought the new XTERRA and one thing for sure, it's not a truck. This was our first big purchase without the ghetto fabulous truck and for one tiny second I wished we had it last night to take the new cottage home. The car seat had to be moved, one of the seats had to be folded down and the cottage had to be taken out of the box to fit. It was a very cozy ride home and Kate had no idea what was sitting next to her.

We got the girl to bed and my man lit a fire and built this thing by fire-light. That doesn't sound correct but you get the picture. He is my superman.

How fun is this?

I waited until after Kate's morning nap to surprise her with her new place.
The momma came up so she could see her face. It was darling.

My girl cookin me brownies

Here I am! I am sitting in the cottage have a tea party with my girl and bloggin. It's sort of quiet out here. Well, besides Kate crawling over me every 7 seconds to push the door bell. See that ball by the fire pit? That's the only "toy" Kate had out here and that $2.50 ball just wasn't cutting it. Not sure she will ever play with that thing again.

'mom, you don't really fit in here..'

I think Kate and daddy should have dinner out in the cottage tonight. I better go and start to prepare their dinner now since Kate's oven takes forever to warm up and that sink is lagging in the water department.

Oh how I love that she already plays pretend.
Takes me back to just yesterday when I was playing house in the playhouse that my dad and grandpa built for me. This may not be as fancy as the one I had but for now it's perfect for our little cottage and it makes her happy. If I could give this girl the world, I would.

For now, a cottage will do :)

The video of Kate checking out her new place for the first time

Now kid, would you stop growing so fast! I can't believe we're already having tea parties and playing pretend. Pretty sure my next post will be to tell you that Kate has graduated college and is getting married.

I better go buy more face cream, quick.

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.
Here’s what I did..
HOMEMADE POP TARTSYIELD:9 servings PREP:1 hour COOK:25 minutes TOTAL:1 hour 25 minutes These are simple and SO delicious! The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again.
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating.
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
I love food. I reward myself wit…
