18 weeks and growing..

Y'all I'm almost halfway there. Almost halfway to the day that we get to meet our little guy for the first time! I had an ultrasound yesterday and my 18 week check up this morning. It was so fun seeing Will on the big screen again. He's getting bigger which is a good thing because so am I! Yes, I have finally hit that point where I LOVE food again.

Let's get to the good stuff..

Weeks: 18

Cravings: I'm loving pickles these days. I've had an intense craving for doughnuts which was finally satisfied last night with a trip to Krispy Kreme. Chris put Kate down to bed and the momma and I drove all the way to the Block and I made her go inside so we could smell the fresh baked doughy goods. Another thing I'm loving but trying to avoid since it's not the healthiest are pepperoni sticks (you know the ones that are always at the checkout line at the market!)

Food aversions: Chicken breasts and steak are still gross.

Heartbeat: 158

Gender: He's still a BOY! :)

Extras: I now sleep with 4 pillows, three of them under my head to help keep heartburn away and one for my belly. I'm basically sleeping on a marshmallow. My belly is measuring on the small side, 16 weeks instead of 18 because I am so tall. It was the same story with Kate. I am starting to feel Will more and more each day. His little thumps are so sweet, one of my favorite feelings in the world! He is also transverse at the moment, good thing he still has time to move!

Our little guy is measuring 2 days ahead of schedule and weighed in yesterday at a whopping 8 ounces! That's the size of Kate's milk that she drinks before bed and from crown to rump he is the size of a bell pepper. It is amazing watching him grow.

Can't wait to see you in two weeks little man!

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.
Here’s what I did..
HOMEMADE POP TARTSYIELD:9 servings PREP:1 hour COOK:25 minutes TOTAL:1 hour 25 minutes These are simple and SO delicious! A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again.
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating.
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
I love food. I reward myself wit…

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.
