22 weeks..

Here we are! Just a couple more weeks left in the 2nd trimester...

Weeks: 22

Cravings: No crazy cravings these past couple of weeks believe it or not. I feel somewhat normal. I am loving ice cream and pizza but nothing crazy or obnoxious!

Food Aversions: Same ol same ol. No chicken breasts or steaks..

Heartbeat: 161 at my appointment yesterday

Gender: precious baby BOY!

Extras: I had a great doctors appointment yesterday. Got the results from my ultrasound and Will looks wonderful! So incredibly thankful for that news. My belly is still on the tiny side but that's not new news. My due date is now anywhere from Jan 28th-Feb 2nd so he is still shooting for the 31st of January. I am up a total of 10 pounds. I'm doing better that I did with Kate at this point, praying I can keep it below 30! With Thanksgiving and Christmas in my future, that's not looking too promising! In exciting news...Chris and I just booked our Babymoon. It's like a honeymoon, except I'm pregnant! We'll be spending a weekend away at a resort in Laguna Beach in December. I can hardly wait to have a weekend to ourselves, snuggle in sweats, walk the beach with hot cocoa, enjoy all the Christmas decorations and SLEEP. So much to look forward to in the coming days, weeks and months!

Our little man is about 1 pound now and is the size of a spaghetti squash!

Hi Nikki. I am loving your baby comparisons to fruit and veggies. It is a great visual. Take care of yourself. Love you.

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.
Here’s what I did..

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again.
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating.
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
I love food. I reward myself wit…
