The Nursery

Williams nursery is 95% complete! Just a couple finishing touches need to happen like hang his canvas, a few pictures and lay down the rug (which I am keeping rolled up until Christmas is over). I need a couple more accessories for the hutch and then we should be good to go!
All of his clothes, blankets, burpies and accessories have been washed and put away. We are having SO much fun preparing for his arrival! I'm so thankful for my parents who painted his room and helped me put it all together. Just a few more weeks and we'll have a little guy to bring this room to life!

can hardly wait to spend sweet time here

he has the sweetest little wardrobe...

Ahh, can hardly wait to meet this little guy! His room is so peaceful and calming. Just how a bedroom should be, especially a nursery. It's simple, elegant and boyish which are all the things I was going for. I didn't realize how much shopping I've done for him until I washed it all and put it away! Such joy it brings me and the joy is only going to multiply when I see his sweet face in everything.

Next up on the list is pack his new diaper bag, get the car seat ready and installed and set up the Moses basket. I think I'll give myself a few weeks for that happens though! I'll update more as we progress but I'm thrilled with what has been accomplished thus far.

I never saw us having a son, my heart is overflowing with gladness as I look down the hall and see our sweet girls room and her baby brothers nursery two doors down. I don't think I will ever find the words to explain the joy I have knowing we get to raise a daughter and a son.

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.
Here’s what I did..

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again.
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating.
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
I love food. I reward myself wit…
