spice it up.

I obviously had a tough morning but the day got better as it went on. I kept myself busy as best as I could. Tonight was "PINC" the ministry that I am on staff with at our church for girls ages 10-18. PINC stands for "Passionately Involved N Christ". It is an amazing ministry that a handful of us women started in the fall and has been such a joy to be part of. I love it! Tonight was health and fitness night. Wow, did I kick my own butt tonight!! I'm worn out and haven't worked out that hard in a loooong time. It's a good kind of worn out though.
This is what I did all afternoon to distract me.....I submitted pictures of our home to decorators from HGTV. I really didn't know what to expect but I wanted to get some feedback from professionals. I'm still new at this home decorating thing but I LOVE it and...I love new ideas! I personally love our house, its a very calm and tranquil place and truly is my castle. It's one of my favorite places in the world to be.
Here are some of the pictures that I submitted...

Kitchen"Your kitchen is fabulous! It looks very clean and crisp! I love the little pop of yellow from your flowers! Great job!"

"You just need a pop of color"

Dining Room

"an area rug would round this out beautifully"

Guest Bath "LOVE the black/white throughout the house, very clean and simple."

"need to add a bright shower curtain."

The Den"would love to see some long drapes to match the rug."

Master Bedroom "your bedroom & bathroom are amazingly serene and tranquil, great job!"

Master Bath"I really like the understated elegance about your home."

"Great picture, very elegant bathroom, how about some wooden window coverings?"

Living Room

"It looks like you need to spice this room up a little."

Ouch, so we have done some great things and need to work on a few more. The living room is the killer, I can't seem to get my hands around it. The palm tree you see in the corner is going and we're going to replace it with something much taller. I didn't submit the office pics because that room will always be a work in progress. I also have come to the realization that we need more color in our house. After one decorated said, "I am renaming you Nikki-Neutral-Andrews" I decided that that is a true statement. I am on the search for the right colors that will "spice up" our house! Any suggestions??!

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.
Here’s what I did..

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.

Goodie Girl Cookie Pop Tarts

Summer is in full swing and Kate and I have a super fun, easy and delicious breakfast or even dessert idea for you to make!  First things first, go find some Goodie Girl Birthday Cake and Magical Animal cookies. They’re gluten free and to die for.  You can make this recipe gluten free by replacing the All Purpose Flour with Gluten Free Flour. Or if you want to skip the homemade dough all together you can use pie crust in the refrigerated section at the grocery store!
