Cabo- day 3

This is going to be short and sweet because the sun sucked everything out of us today! After breakfast Chris, John, Megan and I packed up in our car and headed to Cabo for the day. It's a beautiful town with beautiful people! We were determined to snorkel so we caught a water taxi and got a tour of the famous rocks and sea lions (we got so close I felt like we were at sea world!)... then we got dropped off on Lovers Beach. We spend an hour and a half just swimming. It was heavenly. Our taxi guy picked us back up and then dropped us off at a good snorkeling area. I totally had to mentally prepare for this excursion. I'm like deathly afraid of fish but fish are like my husbands bff and I wanted to share it with him. I jumped in and had an asthma attack. I tried so hard to be brave and I was 70% of the time, it was that 30% when the school of fish came and swarmed around me and they were not small fish!! I screamed through my snorkel countless times and grabbed onto strangers to save me. The fish were beautiful, some were even glowing but they are not my friends. After our water taxi came back to rescue us we went back to the main beach and had lunch on the strip. Did a little shopping, saw some freaky animals and wanted to take all the little mexican kids home with us! They're seriously like 5 and they are out trying to sell things. It was so hard to say no. After all that we came back to our resort and crashed! We were going to go out to this beautiful restauarant to celebrate our anniversary but instead we made dinner in and got cozy. We had a thunder storm this evening which was so perfect! We got sooo much color today and it felt good to have some rain and get cozy. We are so lazy and so relaxed. It's been an awesome day. We are so happy and feel so so blessed!

Goodie Girl Cookie Pop Tarts

Summer is in full swing and Kate and I have a super fun, easy and delicious breakfast or even dessert idea for you to make!  First things first, go find some Goodie Girl Birthday Cake and Magical Animal cookies. They’re gluten free and to die for.  You can make this recipe gluten free by replacing the All Purpose Flour with Gluten Free Flour. Or if you want to skip the homemade dough all together you can use pie crust in the refrigerated section at the grocery store!
Here’s what I did..

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.
