Ohhhh Spa Laaa Laaa

Today was amazing. (period) That's the only word for it. We got up at 6am (not so amazing), put on our sweats then went and got coffee and headed down to the Montage Resort in Laguna. Chris had a meeting for work there today. I dropped him off and spent the morning and early afternoon with grandma and grandpa. We had a yummy breakfast, went Christmas shopping and came back for lunch. Then I was off to the Montage! His work is..amazing. There are so many perks with working at a small firm. They provided such a beautiful day for everyone. Including breakfast, lunch and a massage at the resort. My sweet husband donated his massage to me, totally surprised me. After his boss heard how sweet he was to do that for me they gave him 2 massages so he got to get one too! We spent 5 hours at the spa. It is a very special place to us as that is where we got engaged! I totally relived that day and wished Jess was with me again. The girls remembered me and treated me like a celebrity, I'm not kidding. It was hilarious and oh so fun! We are apparently the only couple who has ever gotten engaged at their spa. Awesome! They were going crazy over Chris, thinking he is too good to be true after all he has done for me. But it's true, he is the best husband God created! :) I got to meet my lady again who did my massage as Chris proposed. They gave us champagne and took pictures of us. It was the most peaceful afternoon/evening that I have ever experienced.
Oh and the best part was I met Chris' boss and all of his co-workers in my robe right after my massage. What a great first impression. Greasy hair, smushed face, jell-o legs. It's definitely a small and intimate office. Love them all. So thankful for his new job!!! The Lord's timing is PERFECT, don't you ever forget that...

we're a little relaxed, can you tell?

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.
Here’s what I did..

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.

Ta-Da!

Goodie Girl Cookie Pop Tarts

Summer is in full swing and Kate and I have a super fun, easy and delicious breakfast or even dessert idea for you to make!  First things first, go find some Goodie Girl Birthday Cake and Magical Animal cookies. They’re gluten free and to die for.  You can make this recipe gluten free by replacing the All Purpose Flour with Gluten Free Flour. Or if you want to skip the homemade dough all together you can use pie crust in the refrigerated section at the grocery store!
