Chris and I are house sitting in Corona Del Mar for the week. We did this last year and loved it and now we're back! We have had the perfect weekend. Chris had to work a few hours on Saturday and snuck away early so we could enjoy the beach. We walked around Laguna and went to a yummy small family Italian restaurant for dinner. Chris took a hot tub while my feet dangled in the warm inviting water. 6 more months and I can go back in one! I begged Chris to stay home today and it wasn't too hard to convince him. We slept in and took Lily (the golden retriever) for a nice long walk around Balboa. Came home and took a heavenly nap then went to Little Corona and played around in the tide pools. It was the most gorgeous day!! Once we got home from the beach we came back and rested up a little bit more then went to Fashion Island for dinner, dessert and more walking! We spent some time in Barnes and Noble thumbing through baby name books looking for a boys name that we could both agree on. We now have a couple! Yippee! We're now back at this beautiful abode cozy and ready for bed. I'm so thankful that we have had this time together and that Chris is completely relaxed and ready for another insane week at the firm. Back to this beautiful day....we could see Catalina from the balcony of the house today. Picture perfect! I got an awesome picture of the sun going down behind Catalina and I will post it later when I feel like walking to the other side of the house to get my cord.
When Chris and I went to Mexico this past winter we quickly become addicted to their blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever. What you’ll need. Medaglia D’oro instant espresso Water Ice Coffee creamer of your choice Heavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon. Step one. Get your ingredients out. I fill my glass up halfway with water and pour a capful of instant espresso in. Mix it real good. Time to cool it down. Now comes the sweet part. This next step is money. Lordy. If you’re feeling really naughty you can add caramel sauce. Do it.
