Cabo, day 6

Here we are on day 6 and it almost seems like we're on day 10... there is no such thing as time here. No plans, no agendas....it's great. Chris and I slept in a bit later today. We had breakfast on the balcony and then headed back to Santa Maria Bay. The boys snorkeled and the girls laid out. I bought some peas for them to feed the fish with and they got some insane pictures of some pretty insane fish. So glad I didn't have to experience it, seeing pictures on the camera is enough for me. Chris is trying to talk me into going with him in the morning and he promises he won't bring peas with him but I'm not sure yet. I'm becoming more of a chicken with things as I get older. Maybe it was my father in law talking about his encounter with the fish today, they came right in between his arms and in his face! Yikes! After snorkeling we came back to the pool and had a great afternoon. When Chris and I got in the pool a cute couple sitting on the side stopped me mid swim and asked when I am due. I was totally caught off guard. I didn't think anyone could tell I'm pregnant? Maybe its my lovely maternity tankini that gave it away!? ha. Who knows but it was fun talking babies with them. We had our yummy strawberry smoothies and soaked up lots more sun! Chris arranged for me to get a prenatal massage at the spa tonight and let me tell you....it was incredible! I wasn't sure what to except but it was the most comfortable and relaxing experience. Kate loved it too. For all my pregnant friends out there, GET ONE! They are totally worth it. I thought I was jello earlier, now Im a big jello jiggler! My mother in law came with me and she got a massage too. It was pure bliss! I'm not too motivated to do anything else tonight. Chris and I went for a walk on the beach, the moon is gorgeous and its shining down on the ocean which makes it sparkle. Its a perfect night here in Cabo.

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever. 


What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon. 
Step one.  Get your ingredients out. 

I fill my glass up halfway with water and pour a capful of instant espresso in. 

Mix it real good. 

Time to cool it down. 

Now comes the sweet part. 



This next step is money.  Lordy. 

If you’re feeling really naughty you can add caramel sauce.  Do it. 

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.

Recipe for the best ribs ever.

You can imagine my excitement when I discovered Gordon Food Service. I used to pass by it weekly and wonder what the heck was in there. Do yourself a favor and look them up ASAP and see if there is one close to you. I am a fan for life!



As a busy mom who loves to cook and make delicious meals but also needs to stay on budget, I can do it all with Gordon’s Food Service!
If you have a big family or throw parties, this is the place to shop. 
We just did an end of summer party and I bought everything here. The meat selection in fresh and frozen is wonderful. 


And you see those peanut butter krispies?  To die for!  In the frozen section. Thank me later. 



You know our deep love for ribs.  Chris does them like no other.  So I thought I’d finally share our recipe. 
All of our items are from Gordon’s Food Service Store.  (Recipe will be posted below)

Ribs are prepped for the oven.
