Whew! It has been quite a week for us. Chris is in full swing with overtime at the firm. Starting this week he is working 7am to about 9pm (sometimes later). We LOVE overtime and he absolutely amazes me. Never once has he complained about the long days. Thankfully the firm treats them to massages and yummy food to keep them going. I went to his office on Wednesday for the first time ever. It is so nice to finally picture where he is and to see everyone again. All his co-workers are so sweet and they absolutely love him. I took in some homemade cookies as a thank you for all they did for Chris, Kate and I. Apparently I am supposed to make more to send with him next week, they were a hit! I had my stitches removed yesterday so I am feeling a lot better! I am waiting for the final report from the dermatologist but apparently I had a melanoma on my back. It looks like they got it all but I also have one on my tummy that needs to be taken out once the little monkey is out. It's never boring with us I tell ya. God is good though. He gives us the strength and the sense of humor to get through it all. The latest and most exciting thing is it looks like labor is upon us. I have been cramping since yesterday so I called my doctor this morning to let him know and they had me come in right away. I am starting to dilate and make progress with contractions about 10 minutes apart right now. They sent me to maternal fetal testing to check on Kate and she is doing great. Shes a busy bee in there with a perfect heart rate and growing right on track. She's around 6 pounds right now.. I go back to the doctor on Monday to get checked again. My gut feeling is that she'll arrive in about 2 weeks. Who knows though. It's comforting knowing that the Lord already has it all determined. We'll rest tonight in that. I have crossed off all of the things I had on my nesting list of things to do, the last one was yesterday. I had the Jeep completely detailed, it looks brand new! Perfect condition for our princess! Please pray that Chris and I get some much needed rest in the next couple days/weeks. I have been waking up in the middle of the night and stay up for hours and he obviously is burning the midnight oil at work. I'll keep y'all posted as best as I can. Hugs!
When Chris and I went to Mexico this past winter we quickly become addicted to their blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever. What you’ll need. Medaglia D’oro instant espresso Water Ice Coffee creamer of your choice Heavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon. Step one. Get your ingredients out. I fill my glass up halfway with water and pour a capful of instant espresso in. Mix it real good. Time to cool it down. Now comes the sweet part. This next step is money. Lordy. If you’re feeling really naughty you can add caramel sauce. Do it. If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck. This is the recipe from my mother in law. It is life changing. Ta-Da! Tag me on Instagram at
