Today was hard. period. Kate screamed all. day. long. Nothing could soothe her. For 3 hours she screamed. It is so hard on your nerves when this tiny little baby is screaming bloody murder and you can't figure out what's wrong. I fed her, burped her, changed her panties, gave her gripe water, snuggled her, walked around with her..did everything under the sun I could think of. I am a patient person, especially when it comes to Kate but this was a testing day for sure. Finally she fell asleep in my arms after 3 long hours. The problem: gas. Lots of it. She let it rip and was back to her happy self. Once she was asleep I called our insurance company. A little history on our insurance story. Our insurance is through Chris' work. It's really expensive and it's our only choice for now because of Kate's infection. No other insurance company will cover her until she is clear from her infection for 3 months. We have been going to this doctor that we love and paying cash because she is not in our network. The network that we are in is horrible and we will never be going back to the doctor there. He misdiagnosed her when she had a staph infection and I am 90% sure she has this new infection because of him. (he was touching and squeezing it last month) So anyway, I called our insurance company this evening to see if we could change Kate's primary care doctor. And just for the heck of it I asked if we could change to the Dr. that we have been going to and love. Without hesitation, she said yes! They changed our network around and she is now all covered!! Thank you Jesus! I can't even tell you how thrilled we are. This was such a blessing and the perfect way to end this trying day.
When Chris and I went to Mexico this past winter we quickly become addicted to their blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever. What you’ll need. Medaglia D’oro instant espresso Water Ice Coffee creamer of your choice Heavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon. Step one. Get your ingredients out. I fill my glass up halfway with water and pour a capful of instant espresso in. Mix it real good. Time to cool it down. Now comes the sweet part. This next step is money. Lordy. If you’re feeling really naughty you can add caramel sauce. Do it.
