Happy Birthday Kate!

I've said it a hundred times and I'm about to say it again,
 I can hardly believe our baby girl is one!

Today I relived Kate's whole birth-day over
 thankfully without any pain this time!

She woke up for her morning bottle at 5:15am since she heard her daddy and as I was rocking her I couldn't help but reflect back on
October 7, 2009...

We were checked into the hospital at 5am and was
 hooked up to pitocin and the show was on the road by 7am
After nine painful hours, a miracle happened.
Katelyn Marie Andrews was brought into this world.
She took her first breath at 3:36pm and had instantly taken over our hearts.
It was as if our wildest dreams all came true in that minute.

We will never forget the first time we met our precious girl
There are no words to even try to describe what that day was like.
Everything about it was a miracle.

 It is absolutely incredible how fast you fall in love.
No words needed to be said.
 Our first hours were precious.
Our first days and weeks and months were precious
and now we're onto years!
They are precious!

I am speechless again as I write to you tonight.
I always knew I would love being a mom
 but I never knew I could experience a love like this.
There really is nothing else like it.

The Lord is so good and we are blown away by His love for us.
We are so thankful that He has entrusted us to be Kate's parents.
To love her, nurture her, protect her, provide for her, grow her
but most of all to share the love of Jesus with her.
She is His precious child and we are thrilled that He gave her to us!

October 7, 2010 was a precious day for our family.
Our little 6 pound 8 ounce baby went from an infant to a toddler
& she definitely let us know that she has her own opinions & personality. I love it!
(by the way, terrible 2's don't start at 2...they started at 10 months!)
 I told her to smile pretty and this is what I got.
Is she a ham or what?
 Kate and I picked Mimi up this morning and went to
 Rockwells for a special birthday breakfast.
I ordered her very first meal off a kid's menu.
Pancakes and bacon. Mmmm!
 We then met up with Papa for lunch at BJ's and she got her very own pizookie!
 Did I mention how much she loved her ice cream?
She must be my child.

 Afternoon snuggles were in order with Mimi after her nap
And I had the joy and honor of snuggling with my girl the very minute she turned 1!
I can't tell you how many times we sang her "happy birthday"...
She loved every minute of it and so did I.
Birthdays are a big deal in our family and even though she won't remember
this one we got it all on film and she will know
 just how much she is loved and what a fun day we had together.

Chris and I celebrated this awesome milestone together tonight by toasting each other with delicious chocolate wine and we played the relaxing cd that we got from the hospital after having Kate.
What a year it has been!
We are so thankful and so excited to see what this next year has in store as we approach the two's.
 Looking back at all her newborn pictures today almost makes me want to have another one. almost.

Happy 1st Birthday precious Kate. You are so so loved.

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever. 

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon. 
Step one.  Get your ingredients out. 

I fill my glass up halfway with water and pour a capful of instant espresso in. 

Mix it real good. 

Time to cool it down. 

Now comes the sweet part. 

This next step is money.  Lordy. 

If you’re feeling really naughty you can add caramel sauce.  Do it.

Recipe for the best ribs ever.

You can imagine my excitement when I discovered Gordon Food Service. I used to pass by it weekly and wonder what the heck was in there. Do yourself a favor and look them up ASAP and see if there is one close to you. I am a fan for life!

As a busy mom who loves to cook and make delicious meals but also needs to stay on budget, I can do it all with Gordon’s Food Service!
If you have a big family or throw parties, this is the place to shop. 
We just did an end of summer party and I bought everything here. The meat selection in fresh and frozen is wonderful. 

And you see those peanut butter krispies?  To die for!  In the frozen section. Thank me later. 

You know our deep love for ribs.  Chris does them like no other.  So I thought I’d finally share our recipe.
