Quarter of a Century

I just celebrated turning 'a quarter of a century' old.
Let me take you back to that January day 25 years ago..
I was born on the day the space shuttle blew up. My poor mom.
As if labor wasn't stressful enough, she watched the space shuttle blow to pieces hours before giving birth.
My birth was not an easy one (so I hear). I was born via emergency c-section with no heart rate and my mom's life was also endangered.
By God's sweet grace, we both made it through.


My momma is an incredible woman. So strong and courageous. After having my own child I have come to believe that birthdays should be about the mom. All that it takes to get a little one here and that birth day takes everything that's within you to make it through. Can I get an amen from all my mom friends? I love you momma. Thank you for all you have ever done for me, your love and devotion towards me has shaped me into the woman I am today.
And really, can you believe your baby is 25? I can't.

So here I am, 25 years after that traumatic day in 1986 and loving this age and stage that I'm at in life. I could have never imagined that my life could be so full at such a ripe age. I am thankful for each new day that the Lord gives me to grow and dig deeper in His love. I feel as I have just spread my wings and am starting to fly. I really want to soak in each day and enjoy life to the absolute fullest.

My birthday celebrations started last week with an awesome dinner with the Andrews!
We went to Orange County Mining Company. One of my favorite spots.
Kate was just getting over her sickness and Chris was just starting to get it, can you tell??

My actual birthday the 28th was perfect!
Kate and I had a loungy morning and then went to BJs for lunch with mom, dad and sister.

Chris and I enjoyed a fabulous evening out.
My poor husband was under the weather but was such a sport and helped make me feel so special.


 We enjoyed a delicious dinner at Tommy Bahamas in Laguna Beach. Thanks to all y'all who offered suggestions on facebook. Can't wait to try all the others. We are now big fans of Tommy Bahamas. I let loose and ordered a chocolate martini and was feeling mighty fine. For those of you who know me know that I am really cheap when it comes to ordering drinks and appetizers. I like a good deal and  all so I never splurge when we go out but I did on Friday and it felt good!

 After dinner we headed over to the Montage Resort which is our favorite resort in the world. We enjoyed more drinks and listened to the crashing waves. It was wonderful having that time, just the two of us. I loved every minute.

 I don't have pictures from our celebration on Saturday night but my parents treated us to dinner at 'Mama Cozza's'. Killer Italian food. I'm totally hooked. Always a good time!

Sunday night my family and friends showered me with more good food and company. We somehow got 20+ people in our little cottage and enjoyed amazing desserts made by my mom and mother in law. Here comes those 10 pounds that I just lost. I went to bed so happy last night. I can't believe this is my life. I can't believe the incredible people who surround and love me. I am so thankful for each one of you.
I am especially grateful for these two...my twins. The love that they show me each and every day is beyond what a girl could ask for.




I love being 25. I am going to cherish each day and live them to the fullest. I'm off to a great start, can't wait to see how the rest of the year plays out. Thank you to all who helped me celebrate. My heart is spilling over with joy. I have been smiling the entire time I have been writing and now my cheeks hurt. That's how much joy I have in my heart!

Oh and as you can see I just learned how to use our scanner (welcome to 2011, Nikki) so y'all will be seeing more amazing photos soon. Be excited.

We enjoyed the celebration at your house last night. Your cottage is beautiful, warm and cozy. It was wonderful to see everyone and visit for awhile. Happy 25th Nikki Nu Nu. I am so glad that you were born.

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever. 


What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon. 
Step one.  Get your ingredients out. 

I fill my glass up halfway with water and pour a capful of instant espresso in. 

Mix it real good. 

Time to cool it down. 

Now comes the sweet part. 



This next step is money.  Lordy. 

If you’re feeling really naughty you can add caramel sauce.  Do it. 

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.

Recipe for the best ribs ever.

You can imagine my excitement when I discovered Gordon Food Service. I used to pass by it weekly and wonder what the heck was in there. Do yourself a favor and look them up ASAP and see if there is one close to you. I am a fan for life!



As a busy mom who loves to cook and make delicious meals but also needs to stay on budget, I can do it all with Gordon’s Food Service!
If you have a big family or throw parties, this is the place to shop. 
We just did an end of summer party and I bought everything here. The meat selection in fresh and frozen is wonderful. 


And you see those peanut butter krispies?  To die for!  In the frozen section. Thank me later. 



You know our deep love for ribs.  Chris does them like no other.  So I thought I’d finally share our recipe. 
All of our items are from Gordon’s Food Service Store.  (Recipe will be posted below)

Ribs are prepped for the oven.
