Mother's Day

Mother's Day is such a treat. I remember when I was a kid thinking how lucky my mom was to have two days just for her. Her birthday and mother's day. I would always dream about my own mother's day and having two days out of the year to celebrate me. That sounds so selfish looking back but I could have never imagined Mother's day could and would be so wonderful.

I love mothers day for three reasons.

#1. I get to celebrate and honor the woman who means the most to me, my mom. I do my best to show her year round how much I care for her and love her but Mother's day, the spotlight is on her and she deserve every second of it. And mom, I do not tell you this enough... thank you for all you do for us. You will never know how much it means and your never ending love for us fills my heart with so much JOY!

#2. I get to celebrate the wonderful mother in law that the Lord blessed me with. The woman who raised an incredible man that God made just for me. I am so thankful for her and the mom figure she plays in my life.

#3. I get to celebrate being a mommy! There is nothing better in the world than being a mom. Nothing! The joy. The rewards. The constant giggles. The snuggles. The kisses. The getting up in the middle of the night to comfort her when she needs it. It is wonderful and I celebrate the gift of being a mom to our precious Kate daily!

I am so blessed to have a mom and mother in law who love Jesus. Both whom raised their children up in the Lord and have Him as the foundation of their homes. I love this verse. It reflects how Chris and I were raised and we pray that it will remain the same for our children. 

"Teach your children to choose the right path, and when they are older,
 they will remain upon it". 
 Proverbs 22:6

I  had a wonderful mother's day weekend. I had two full days of shopping ALONE. It was so peaceful and exciting. My husband set me free and off I went to pick out new things for our house and new clothes for me. You know you're a mom when a new duvet for your bed is exciting! I was able to sleep in until 8 this morning and had the cutest little peanut run in to wake me up and bring me breakfast in bed. Nutella and banana pancakes with my favorite caramel mocha!

My man took me to Sonic for lunch. Sounds ghetto but it was wonderful. I was pretending that we were in Tennessee. And then I remembered that I will be there in just a few weeks. Oh how I can't wait. {can't wait to see my sweet family who I miss sooo much}

We headed over to mom and dads house for dinner and dessert and spent sweet time with grandma and grandpa.  The men cooked a delicious dinner for their girls and my husband made a smores pie that was to die for. I'll post the recipe this week. Mmm!

I am feeling so loved and cherished tonight. Thank you Jesus for my Grandma's who were are are fabulous moms, to my mom who is the BEST, to my mother in law who is a sweetheart and to my baby girl for making me a proud mommy. I really never knew life could be so sweet.

And a very happy mother's day to all the momma's out there! To the widowed and single moms, I pray that your heart was filled with an abundance of joy today and everyday. To the soon to be mommies, enjoy every kick and hiccup from the inside! Your arms will soon be full and your heart will be even bigger! I am thankful for all my mommy friends, you fill my life with so much love and laughter.

Homemade Pop Tarts

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever. 

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon. 
Step one.  Get your ingredients out. 

I fill my glass up halfway with water and pour a capful of instant espresso in. 

Mix it real good. 

Time to cool it down. 

Now comes the sweet part. 

This next step is money.  Lordy. 

If you’re feeling really naughty you can add caramel sauce.  Do it.

A healthier me.

Remember my Trust your gut  post?I feel like a whole new girl since I wrote that a month ago.  So many things have been confirmed and I feel like my happy healthy self again. 
All because of two things; 1. The gallbladder cleanse that I posted about.  Literally saved my gallbladder and my sanity.  No more stomach pain! And I can drink wine and margaritas without pain again! 🙌🏼
2. I found out that I have a sensitivity to gluten. It's still a mystery to me as to how I developed this but all I know is that when I do have gluten my joints hurt, I get awful headaches and an upset stomach along with bloating. 
Back to my first post about this... I took a "before picture" thinking I was going to 5-10 pounds and then post my "after" picture. 😂😂😂
Truth is, there are still plenty of calories in gluten free food. The other truth is I'm 80-20 gluten free. I still enjoy a few non-gluten free treats here and there (and then pay for it later).
