Getting closer.

A week from today I will know (Lord willing) what baby #2 is. I am so excited and can hardly wait to know if it's a sweet baby girl or a precious baby boy! It is going to take all that I have to not spill the beans to Chris until the following evening at dinner. I know I can do it though. I promised that I will not tell a soul. My husband will be the first one to know after me and then we will share with the rest of our family on Saturday night..which means y'all most likely won't know until Sunday. Sorry!

Here is what I'm experiencing with baby #2...

Weeks: 15

Cravings: none really but I'm still loving bread.

Food aversions: chunks of meat. Chicken and Beef. Gross.

Heartbeat: steady in the 160s

Extras: I am breaking out like a 13 year old, my tummy is stretching and growing daily, I still don't have much energy, I tend to be grumpy often, I've made one homemade dinner in 2 months (so lame), and I'm already having a hard time sleeping due to someone laying on my bladder.

All of these symptoms are the same ones I had with Kate and up until now I would have put money down that this baby was also a girl. However, that all changed last weekend. I had a dream at the beginning of this pregnancy and it was clearly a girl. This past Saturday night I asked the Lord to give me a dream and show me what we are having. Sounds silly but He did and it was clearly a boy. Because of that I am now convinced that this baby is a boy. Either that or He just wants me to be really surprised. I'm pretty sure we will be totally surprised since Chris and I have both gone back and forth with our gut instinct. He has said boy all along until recently and now says it's a girl and I have switched from girl to boy. My instinct with Kate was a boy and clearly you see how that one turned out. My motherly instincts don't have a very good track record.

So what is your guess? I want to hear!

Boy?
Girl?

It ends in a couple days!

Can't wait to know what you are, baby!
Can't wait to call you by name!

I'm going with BOY.....just a guess :-) You should try the chinese gender calendar and see what it says. I did it with E and it was right. I looked at it again for my next child if all goes well and it will certainly be interesting if it is all correct. Either way boy or girl it's a wonderful gift :-)

Goodie Girl Cookie Pop Tarts

Summer is in full swing and Kate and I have a super fun, easy and delicious breakfast or even dessert idea for you to make!  First things first, go find some Goodie Girl Birthday Cake and Magical Animal cookies. They’re gluten free and to die for.  You can make this recipe gluten free by replacing the All Purpose Flour with Gluten Free Flour. Or if you want to skip the homemade dough all together you can use pie crust in the refrigerated section at the grocery store!
Here’s what I did..

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever.

What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon.
Step one.  Get your ingredients out.

I fill my glass up halfway with water and pour a capful of instant espresso in.

Mix it real good.

Time to cool it down.

Now comes the sweet part.

This next step is money.  Lordy.

If you’re feeling really naughty you can add caramel sauce.  Do it.

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.

You know our deep love for ribs.  Chris does them like no other.  So I thought I’d finally share our recipe.

Ribs are prepped for the oven.

After 4+ hours in the oven the ribs go on the grill. Toss on a little extra seasoning and sauce for this part.
