4 years..

My handsome husband and I just celebrated 4 wonderful years of marriage.
They have been years filled with adventure, joy, trials, laughter, tears but more than anything a love that I could have never imagined.

I love to reminisce so I'm going to take a quick look back at the past 4 years.

Our anniversary hasn't been quite the same celebration as it was for our first since welcoming Kate into our lives 2 years and 1 day later but her life has taken our love to a whole different level. We are lucky to sneak in a date night to celebrate and this year's dinner was awesome!

I won a $100 gift card to Spaghettini from a radio station on Mother's Day and we decided this would be a perfect time to use it. We enjoyed an incredible dinner and dessert and they even sent us home with a whole wood fired grilled pizza to go! Talk about awesome service! My man enjoyed a martini while I sat on the other side of the table completely jealous that I couldn't order one but so thankful for our little guy who is growing strong and healthy inside my belly.

Thank you you for loving me, love. 
4 wonderful years down and a lifetime of more adventures ahead. 
I can't wait!

Homemade Pop Tarts

To be honest, I’m not a fan of the boxed pop tarts but homemade ones make me weak in the knees. Our local coffee shops here in Tennessee sell them and they’re my guilty pleasure.  I decided to take a quiet Tuesday morning and make some with my sweet boy.

The best iced coffee, ever.

When Chris and I went to Mexico this past winter we quickly become addicted to their  blended espressos. I found myself craving them when we got home so I played around with a couple of instant espressos and ended up making the best iced coffee, ever. 


What you’ll need.  Medaglia D’oro instant espresso Water IceCoffee creamer of your choiceHeavy cream + caramel Trust me on the instant espresso. I tried them all. This is the best. I get it at Kroger. I’ve also heard Walmart carries it as well as trusty amazon. 
Step one.  Get your ingredients out. 

I fill my glass up halfway with water and pour a capful of instant espresso in. 

Mix it real good. 

Time to cool it down. 

Now comes the sweet part. 



This next step is money.  Lordy. 

If you’re feeling really naughty you can add caramel sauce.  Do it. 

If you’ve been wanting the recipe for the BEST homemade caramel ever then you’re in luck.  This is the recipe from my mother in law.  It is life changing.

Goodie Girl Cookie Pop Tarts

Summer is in full swing and Kate and I have a super fun, easy and delicious breakfast or even dessert idea for you to make!  First things first, go find some Goodie Girl Birthday Cake and Magical Animal cookies. They’re gluten free and to die for.  You can make this recipe gluten free by replacing the All Purpose Flour with Gluten Free Flour. Or if you want to skip the homemade dough all together you can use pie crust in the refrigerated section at the grocery store!
